Lemon Curd

4oz Butter, cubed

4 Eggs, beaten

8oz Honey

Juice of 5 and zest of 3 Lemons (about 175ml of juice needed)

Method: Put it all in a bowl and stir over simmering water til it thickens.

Don't let the water touch the bowl.
